Bacon Wrapped Sweet Potato Puffs

What isn't good wrapped in bacon?  I stumbled upon these at a Whole Foods food bar in Manhattan Beach and vowed to copy them.  The added trick to these is that there is chopped jalapeno in them.  You can decide if you want to use "nitrate-free" bacon as technically the celery juice used to cure "nitrate-free" bacon is chock full of naturally occurring nitrates.  The bigger question would be if the pig were pasture raised.  Another interesting thing to consider is this article about pork and how it affects our blood
We eat bacon regardless about once a week in some capacity. 

Bacon Wrapped Sweet Potato Puffs
1/2 bag Alexia Sweet Potato Puffs (you can go for extra credit and just roast off some 1 inch chunks of your own if you want them to be organic and local)
1 12oz. package bacon, cut in half horizontally.  A thinner slice works best
1-2 jalapeno, chopped fine (Triple T Ranch & Farm)


Cook off the potatoes according to package directions
Increase oven temp to Broil
Place a small amount according to taste of the chopped jalapeno on the 1/2 bacon strip
Roll the tater puff up in the bacon
Place seam side down on baking sheet
Bake in oven 7-10 min. Check for doneness, you can also roll back up some that may have loosened up and flip over those that look like they are getting too dark on the bottom. Bacon should be well-browned, go another 3-4 min. if not.  An additional 1-2 min. until done.
